2026 International Food Information Council Food & Health Survey: A Focus On Food & Ingredient Safety

Americans are becoming increasingly vocal and inquisitive about what goes into their meals, according to the latest findings from the International Food Information Council. The 2026 Food and Health Survey reveals a complex relationship between consumer trust and anxiety, showing that while confidence in the U.S. food supply has ticked upward to 62 percent, this recovery does not necessarily mean people are less worried. In fact, experts suggest that consumers are simply more engaged than ever before, actively processing information about recalls and regulations rather than ignoring them.

This shift toward active engagement comes at a time when specific concerns regarding chemicals and contaminants are dominating the conversation. When asked to identify their primary food safety worries, nearly half of respondents pointed to pesticides and carcinogens as top priorities. While foodborne illnesses remain a consistent leading concern over the last three years, there is a growing fixation on invisible ingredients. An overwhelming 95 percent of those surveyed listed at least one chemical or ingredient related worry among their top three concerns, signaling a broader demand for transparency in labeling and sourcing.

The timing of the research provides a unique window into how public perception evolves during crises. The initial survey was conducted just before a tumultuous summer marked by high profile Salmonella and E coli recalls along with a significant Cyclospora outbreak linked to lettuce. By pairing early spring data with follow up surveys taken in August, the IFIC captured a snapshot of a public that is weighing official headlines against their own personal experiences. This suggests that modern consumers are no longer passive recipients of safety assurances but are instead forming nuanced opinions based on current events.

Wendy Reinhardt Kapsak, President and CEO of the IFIC, noted that confidence and concern are currently rising together rather than acting as opposites. Although current confidence levels remain well below the record highs seen in 2012, the seven point jump since last year indicates a stabilizing trend. As the organization continues to release further insights throughout the year, it appears clear that for today’s shopper, being informed is now just as important as trusting the system itself.
