The highlight of the evening was a keynote address by Mark Schatzker, a writer in residence at the Modern Diet and Physiology Research Center affiliated with McGill University. Known for his critical look at industrial food systems in books like The Dorito Effect, Schatzker spoke about how ultra processed foods create a sort of food casino. He explained that manufactured flavors often mimic real nutrients without providing them, hitting a bliss point that disrupts the body’s natural ability to signal satiety. This disconnect often leaves people craving more even when they have consumed plenty of calories.

To put these theories into practice, attendees participated in a tasting session where they compared various versions of bone broth, salsa, and sourdough. The exercise encouraged guests to distinguish between nature flavors and those engineered by humans, highlighting differences in richness and authenticity. Following the discussion, guests shared a meal prepared by Kara Winkler of Glimpse of the Prairie, which featured fresh ingredients like zucchini cake and herbs grown right on site to demonstrate the power of simple, honest food.

Ultimately, the workshop served as a reminder that human health begins far beneath our feet. By connecting the quality of flavor back to regenerative farming practices, the event reinforced a primary goal of the Natural Resources Conservation Service: that healthy soils lead to healthier food systems. In emphasizing this cycle, organizers illustrated that protecting the land is not just an environmental necessity but a fundamental requirement for sustaining community wellness.
